Fried Calamari in Sour Cream Sauce
To the squid lovers out there, I would like to share my recipe of calamari that is cooked home-style. It can be served with rice or alone.
Fried Calamares in Sour Cream Sauce
Ingredients:
1 kg medium sized Squid
1 medium green lemon
1 tsp. ground black pepper
1 tsp. iodized salt (kosher salt)
2 egg whites
1 cup all-purpose flour
For sour cream sauce:
1/2 cup mayonnaise
1/3 cup sour cream
1 tbsp. snipped dill leaves
1 tbsp. grated ginger
Procedure:
Clean the squid and remove head, ink sacs, tentacles discarded, outer purple skin peeled off.
Slice the squid into 1/2 inches. Marinate in lemon juice for about 25 minutes.
Season with salt and pepper and mix thoroughly.
Dip the squid rings in the egg whites and coat in all-purpose flour.
Heat oil in the frying pan and fry the squid rings in hot oil a few pieces at a time. Do not overcook.
Drain the cooked calamares in paper towel. Set aside.
Combine the mayonnaise, sour cream, dill and grated ginger in a bowl.
Put in a small bowl and serve with the fried calamares.
Note: If dill leaves are not available, substitute with parsley or any favorite herb. |
