Blackened Cajun Style Catfish Fillets
Combine:
1 Teaspoon garlic/pepper
1 teaspoon thyme
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon black pepper
½ teaspoon salt
¼ red pepper
The ticket is to set your plates ups for DRY, WET, DRY
First roll each fillet in the dry ingredients then in the wet and then back in the dry.
Serves -4
Melt 4 tablespoons unsalted butter and then roll each fillet one more time before placing in a HOT cast iron skillet.
Sear each side until blackened, about four min per side.
You may want to do this outside over an open fire as it will generate a lot of smoke. |
